the organoleptic characteristics of the wines alive

More and more often we hear about underwater refinement. A trend that today finds wide acceptance in
the world of wine, watched with interest by producers for its obvious advantages. Basically, it involves
putting the bottles of wine under water to refine, whether it is sea or lake, at a depth that offers optimal
aging conditions, if not better than those offered by a traditional cellar, especially in the case of sparkling
wines. Under water, in fact, the bottles rest at a constant temperature in an environment devoid of light,
lulled by the currents that continually stir the yeasts, as if to simulate a sort of ‘remuage’. Finally, the
atmospheric pressure plays a fundamental role, which limits the gaseous exchange between the bottle and
the surrounding environment, ensuring that the carbon dioxide is better integrated and the bubble finer.
To date, more than thirty companies in the world have opted for this refinement process, giving life to
‘underwater wines’ of all kinds. Here are the ten we have chosen.
Romagna Docg Albana ‘Squilla Mantis’ – Tenuta Del Paguro
Area: Emilia-Romagna;
Grapes: 100% Albana;
Color: Golden yellow;
Alcohol Content: 14.5%;
On the nose: Apricot, orange peel, black tea, walnuts;
On the palate: Wide and soft, great freshness and excellent flavor;
Aging: Immersion of the bottles in the waters of the Adriatic Sea at a depth of 25-30 meters for 12-18
months.
Bolgheri Rosato UnderWater 2018 – Tenuta Campo al Signore
Area: Bolgheri, Tuscany;
Grapes: 60% Sangiovese, 40% Merlot;
Color: Rosé with orange reflections;
Alcohol Content: 12.5%;
On the nose: White peach, orange peel, spicy notes;
On the palate: Fresh, savory, round;
Aging: Immersion of the bottles in the waters of Portofino at a depth of 52 meters for 6 months.
Talamo a mare IGT 2018 – Terre di Talamo
Area: Maremma, Tuscany;
Grapes: Blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Syrah;
Color: Ruby red;
Alcohol content: 14%;
On the nose: red currant, chinotto, officinal herbs;
On the palate: Medium body, fine and round tannins, savory;
Aging: Immersion of the bottles in the waters of the Argentario at a depth of 35 meters at a constant
temperature of 16 °, with a stay of 12 months.
Extra dry sparkling wine ‘Akènta Sub’ – Cantina Santa Maria la Palma
Area: Alghero, Sardinia;
Grapes: 100% Vermentino;
Color: Straw yellow with greenish reflections;
Alcohol Content: 12.5%;
On the nose: Broom, golden apple and bread crust;
On the palate: Fresh and lively, with a light body;
Aging: Immersion of the bottles in the waters of the Isola Piana Marine Protected Area, at a depth of 40
meters for 12-24 months.
Trentodoc zero dosage “Lagorai” 2015 – Romanese
Area: Trentino-Alto Adige;
Grapes: 100% Chardonnay;
Color: Golden yellow;
Alcohol Content: 12.5%;
On the nose: Quince, pineapple, aromatic herbs;
On the palate: Elegant, savory, structured, with great persistence and pleasantness;
Aging: Immersion of the bottles in Lake Levico at a depth of 20 meters for over 2 years.
Spumante Classic Method Brut ‘Abissi’ 2017 – Bisson
Area: Tigullio, Liguria;
Grapes: Bianchetta, Cimixà and Vermentino in variable quantities;
Color: Straw yellow;
Alcohol Content: 12.5%;
Nose: strongly iodized and brackish, lime and ripe apple;
On the palate: Intense minerality and freshness balanced by an elegant softness.
Aging: Immersion on the seabed of Sestri Levante of the bottles contained in stainless steel cages, at a
depth of 60 meters and at a constant temperature of 15 °, with a stay of at least 18 months.
Sea Legend N5 – Crusoe Treasure
Area: Bilbao, Spain;
Grapes: 100% Viognier;
Color: Golden yellow with greenish reflections;
Alcohol Content: 15.5%;
On the nose: Melon, mint, black tea, incense;
On the palate: Great complexity and great structure, fresh and round;
Aging: Immersion of the bottles in the waters of the Bay of Plentzia for 15 months.
Navis Mysterium Undersea Amphora 2013 – Edivo Vina
Area: Dalmatia, Croatia;
Grapes: 100% Plavac Mali;
Color: Ruby red with purple reflections;
Alcohol Content: 14.5%;
Nose: Plum, black currant, cloves;
On the palate: Fresh and juicy, with a nice flavor and very fine round tannins;
Aging: Immersion on the seabed in terracotta amphorae at a depth of 18-25 meters, for 12-24 months.
Sparkling wine ‘Marà del Lago’ – Bianchi
Area: Ticino, Switzerland;
Grapes: 100% Cabernet Sauvignon;
Color: Pale coral pink;
Alcoholic Content: 12%;
On the nose: wild strawberries, red currant, vanilla;
On the palate: Lively and creamy, persistent;
Aging: Immersion of the bottles in Lake Ceresio at a depth of 25 meters.
Champagne AOP zero dosage “-52 Cloe Marie Kottakis, Limited Edition” – Jamin
Area: Champagne & Liguria;
Grapes: 100% Pinot Nero;
Color: Straw yellow with golden reflections;
Alcoholic Content: 12%;
